Everyone Needs One Dish They Bring to Everything

Everyone Needs One Dish They Bring to Everything

You should be the Deviled Egg Person. Or the Cornbread Person. By the time you are forty, somebody ought to be asking if you are bringing the thing.

A signature dish takes all of the stress out of being invited places. You do not wonder what to bring. You do not buy a fourth bag of chips. Your hands know the recipe, the host knows what to expect, and you get to be gently famous in a very small circle.

What makes a good one

  • It travels well in a car.
  • It tastes fine at room temperature.
  • It can feed twelve, at least in theory.
  • You can make it while thinking about something else.

What to avoid

Skip anything that requires the host’s oven at the moment everyone arrives. Skip anything with a sauce that must be applied by you personally, with ceremony. And please, no experiments. A funeral lunch is not a place to try something you saw in a video.

If you get tired of it, too bad. It belongs to the people now. Those are the terms of being beloved.
